granola bars

for Caroline, who was asking about these today.
this is an easy one to switch around a bit. I always trade the raisins and papaya for something else.

3/4 cup butter, diced
2/3 cup clear honey
1 (generous) cup raw sugar
3 cups jumbo oats
1 tsp ground cinnamon
3/4 cup pecan halves
1/2 cup raisins
3/4 cup dried papaya, chopped
3/4 cup dried apricots, chopped
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
2 tbsp sesame seeds
1/2 cup ground almonds

Preheat the oven to 375F. Line a 9inch square pan with baking parchment. Put the butter and honey in a large heavy pan and heat gently until the butter has melted and the mixture is completely smooth

Add the sugar to the pan and heat very gently, stirring constantly, until the sugar has completely dissolved. Bring the butter mixture to the boil and continue to boil for 1-2 minutes, stirring constantly until it has formed a smooth caramel sauce. Remove from heat

Add the remaining ingredients and mix together. Transfer the mixture to the baking pan and press down with a spoon. Bake for 15 minutes until the edges turn brown

Place in the refrigerator and chill well. Turn out of the pan, peel off the parchment and cut into bars
